MANGO JELLY RECIPE

WHAT IS MANGO JELLY:

Pickle is a mouth-watering Dessert. In India every family has their own pickle recipe. Every year summer comes with sourness and sweetness of mangoes. This sweet mango pickle recipe is very famous in Bengali cuisineSweet pickle is not so common in the other part of India. Its taste is different from tangy mango pickles. You can enjoy it in any season with Roti, Chapatti, DosaRice or anything you want. It could be different in the different house’s recipe by their taste and legacy. To make bengali Sweet Mango Jelly Pickle follow these steps below.

INGREDIENTS:

*1cup - 250ml; *1tbsp. – Tablespoon; *1tsp. – Teaspoon;

  • Raw Mango – 700grm
  • Black Salt - 1/4 tbsp.
  • Sugar - 500grm; (**you can use more if your mangos are very sour.)
  • Dry red chili - 3 or 4pieces
  • Ginger - 1 inch
  • Pachforon **- 1/2  tbsp.

**Pachforon: This is an equal quantity mixture of “five spices”. These are

  • Cumin seeds (jeera)
  • Fenugreek seeds (methi)
  • Black cumin seeds (kalonji/kala jeera)
  • Fennel seeds (saunf)      
  • Black Mustard seed (Rai) 


INSTRUCTIONS:

1.Choose raw mangoes. Wash and dry the mangoes, remove all peels from mangoes.

2. Now grate all mangoes; if there is more water in it, separate it by pressing the grated mangoes. Let it dry for 5 minutes.

3. Heat a pan; roast all the whole spices (dry chili and pachforon) for 1 minute. Keep these roasted spices aside, leave it to cool, cut chilies into small pieces.

4.  Cut the ginger into small slices.

Tips: You can also use Jaggery instead of sugar **.
Tips: Do not increase the gas flame till the end **.

HOW TO MAKE MANGO JELLY:


Step 1: Heat a pan; put the dry grated mangoes and sugar on pan. Keep stirring the whole thing for 3 to 5 minutes on low flame.  

Step 2: When sugar melts, Add roasted masala (spices), chopped ginger, 1 tsp. of black salt on the pickle. Keep stirring the mixture of pickle for 10 to 15 more minutes on low flame.

Step 3:  When it becomes a bit thicker, take out some sugar syrup, leave it on plate to cool. After cooling down use your two fingers to check the stickiness of the syrup.

Tips** If the syrup is a bit of sticky and creates line between two fingers then mango pickle jelly is ready**.

Step 4: Leave the pickle to cool for 1 hour.

Step 5: Mango Pickle is ready, keep the Sweet mango jelly pickle in a glass jar with lid on. Pickle should be ready in 10 days.
