DHOKLA RECIPE

WHAT IS DHOKLA:

Dhokla is a very famous & healthy Gujarati dish. You can make it within 20 minutes as a healthy and tasty breakfast. I always prefer my breakfast heavy, tasty and easy to digest. Dhokla contains all the things which I need. Gram flour is rich of protein, includes with natural flavored ingredients makes dhokla delicious and nutritious.

TOTAL TIME TO MAKE DHOKLA:

INGREDIENTS:

*1cup - 250ml; *1tbsp. – Tablespoon; *1tsp. – Teaspoon;

  • Gram flour (Besan) – 2/3rd cup
  • Lemon – 1 big or two small one
  • Curry leave – 2 bunches
  • Green chili – 2 pieces
  • Sugar – 2+3 tsp.
  • Salt – ½ tsp.
  • Eatable soda – ½ tsp (sodium bicarbonate)
  • Turmeric – ¼ tsp.
  • Mustard seed – ½ tsp.
  • Raw dried red chili – 1 piece
  • Water – 1+ ¼ cup
  • oil - 1 tbsp.


INSTRUCTIONS:

1. Always use chana dal flour as gram flour. Chana gram flour has a unique flavor and texture to make perfect dhokla.

2. I always prefer curry leave for dhokla. Alternatively you can use coriander leaves.

3.   Don’t use more turmeric. Else your dhokla will be red in color.

4. Instead of edible soda you can use ½ pack of eno small sachet. Don’t use more than that.

5.  If you don’t have steamer you can make it by any pot which you have in your kitchen.

6.   Always add lemon at last step to make batter.

7.   Green chili is also optional to add into the batter, if you don’t want skip it.

8.   Here I am using a big juicy lemon.


HOW TO MAKE DOKLA:

Step 1: Chop chilies finely and cut lemon into equal two pieces.

Step 2: Take a bowl, add the flour into it and break its lumps properly. Now add chopped green chili, turmeric, soda, 2 tsp. of sugar, ¼ tsp. of salt and mix them very well.

Step 3: Add ¼ cup of water to make a thin batter. When batter is ready, squeeze ½ of the lemon into it and gently mix it.

Step 4: Take a flat base container, brush it with little oil and pour dhokla batter into it.

Step 5: Now take a pan or steamer add some water into it and wait to boil. When water starts boiling, put dhokla batter container into it and put the lid of steamer or pan. Dhokla takes around 15 minutes to cook properly.

Step 6: Meanwhile take another pan add 1 tsp of oil into it. Now add mustard seed, dried red chili and curry leaves, fry it for a minute and add 1 cup of water into it. When water starts to boil add ¼ tsp of salt, 3 tsp of sugar and squeeze ½ of lemon into it. Boil the water for 2-3 minutes.

Step 7: Now your dhokla is ready. Wait for 2 minutes then cut it into small square pieces within the container. Then pour the sweet and tangy water into it. Cover and leave the container for another 2-3 minutes after that your dhokla will be ready to eat.
