Biryani is an all in one meal and it could be veg or non-veg. The recipe came from Persian’s kitchen to Mughal’s Kitchen and now we have so many variety of this dish all over the country. Biryani is rich in flavor and has mouthwatering aroma of Indian spices. Here we will learn to make one of my personal varieties of Biryani - The Grill chicken biryani, which is also one of my favorite dishes. I hope you will like and enjoy this recipe with its flavorful taste which may increase your fascination towards Indian food.

1cup-250ml/230gm; *1tbsp.–Tablespoon; *1tsp.–Teaspoon; 

  • v Basmati rice (aged) –1½  cup or 250gms
  •  Chicken (big pieces) – 600gms
  •  Onions – 2 medium size
  •  Curd (dahi) – 100gms
  •  Coriander powder – 2 tsp.
  •  Cumin powder – 1 tsp.
  •  Red chili powder – 1 tsp.
  •  Ginger garlic paste – 1 tbsp.
  •  Oil – 2 tbsp.
  •  Turmeric powder – 1 tsp.
  •  Salt – as per taste
  •  Keora water – 2 tbsp.
  •  Rose water – 2 tbsp.
  •  Ghee – 1 tbsp.
  •  Biryani Masala – 1 tsp.
  • Raw garam masala – 2 cardamom (elichi), 2 inch cinnamon(darchini) , 4 cloves(long), 4 pepper(golmarich),1 Bay leave.


ONE: First wash the chicken and take it in a big bowl. Now add all the spices (salt, turmeric, red chili, coriander, cumin, oil, ginger-garlic paste) one by one into the bowl and mix them well. Finally add curd and mix it. Now put them aside for 2 hours to marinate.


TWO: Meanwhile take rice into another bowl, wash and soak it for 30 minutes.

** Do not soak rice more than 30 minutes, else it may break during cooking.**

THREE: Now take onions and chop it into even long slices. Fry till it become dark red in color. (This is called Beresta). Keep it aside.

FOUR: Now take another pot, pour it with water and put on the gas. Add some salt and raw garam masala (preferably roughly grinded or smashed) in it and boil it. It will absorb some flavor of the spices.


Step 1: After 2 hours our chicken is marinated completely and ready to go to oven. Put the microwave on convection mode with 180 degree and preheat it. When microwave is ready put the marinated chicken on microwave safe crusty plate and put it into the oven. Set time for 7 minutes. After 7 mints change the microwave settings from convection to grill mode and cook it for another 14 minutes. During the grill you can turn chicken pieces to other side. Over all we need 21 minutes to cook the chicken.


Note: If you don’t have grill function in your oven, you can cook it in convection mode (180 degree) for 20 minutes. Make sure to turn it over once in between.


Step 1.1: We will now boil the rice in parallel.  Put the rice into the spice mixed hot water and cook it for around 10 minutes. Now drain the water and keep it aside. Here the trick is, rice should not be completely cooked turn off the gas when you think rice is 70% cooked.

Tips: Sync the time so that the step 1 and 1.1 are finished together. Hot combo with rice and chicken makes it juicer.

Step 2: When chicken will ready put it on a large pot which has thick base. You can brush it with Ghee or oil before putting the chicken (It enhances the flavor), now add the rice on it and spread it properly.

Step 3: Now top it up with Baresta (Fried onion), and then add 2 tbsp of Keora water, equal amount of rose water and biryani masala on it. Now put a lid. Here you can use wheat dough to seal it properly.


Step 4: Now put the pot on gas (extreme low flame) or put a tawa on low gas flame and put the pot over it. Then leave like this for 15 to 20 minutes.

Tips: It works equally well in Rice cooker, use it for 5 – 7 minutes in cook mode and 30 minutes in Warm mode.


Step 5: Your grill chicken biryani is now ready to be served. Enjoy the dish with your family and if you have time then make some Rita and Salad to complete the dish.


Raita and Vegetable Salad are the best combo with grill chicken biryani.
